This cosmopolitan plant bares the familiar yellow flower we're all familiar with in the Spring.  However, the dandelion is a SUPERB plant.
The dandelion is excellent for loosening heavier soil structure with its  taproot that also mines minerals and can store them in its tissues.
The young dandelion leaves are excellent in salads, and is commonly used in European cuisine, and is also rich in antioxidants. 
Dandelions are also excellent for micro-green production with their rich flavor.
The white tap root of the dandelion is a coffee substitute.
Very tough plant that can withstand extremes in Sun, temperature and pest pressure.
The dandelion, with its wonderful growth rate and adaptability, is being investigated for possible health promoting properties and unique antioxidants.
