The soft turrón of Jijona from Maria Simona follows a traditional recipe, rooted in centuries of craftsmanship. Originally, the majority of Spanish nougat production was centered in the city of Alicante. What led Jijona to become a global reference for authentic turrón is tied to a historical legal dispute.
In 17th-century Spain, trade was dominated by guilds—powerful organizations with exclusive rights to manufacture certain products. Turrón makers weren’t part of any guild but were farmers earning extra income by selling this treat. The confectioners’ guild of Valencia, claiming honey and sugar products as their exclusive domain, filed a lawsuit against Alicante’s turrón makers.
To escape these restrictions, artisans in the small town of Sexona—today known as Jijona—took over production. Far from the influence of the guilds, they mastered the craft of turrón-making, eventually earning Jijona its status as the birthplace of authentic Spanish nougat.
