### Thai Basil (*Ocimum basilicum* var. *thyrsiflora*)
**Description:**
Thai Basil has a distinctive flavor profile that combines anise and licorice with a hint of spice. It features small, pointed green leaves with purple stems and vibrant purple flower spikes. It is a staple in Southeast Asian cuisines.

**How to Start from Seed:**
1. Sow seeds indoors 6–8 weeks before the last frost date.
2. Use a seed-starting mix, and plant seeds 1/4 inch deep.
3. Keep the soil moist and maintain a temperature of 70–75°F (21–24°C).
4. Germination takes 5–10 days. Provide bright light or grow under fluorescent lights.
5. Transplant seedlings outdoors after the danger of frost has passed.

**How to Grow in the Garden:**
- **Planting:** Choose a sunny location with well-drained, fertile soil (pH 6.0–7.5). Space plants 12–18 inches apart.
- **Care:** Keep soil consistently moist but not waterlogged. Use mulch to retain moisture and suppress weeds.
- **Maintenance:** Pinch back stems to encourage bushy growth and prevent flowering, which reduces leaf production.
- **Companions:** Grows well with tomatoes, peppers, and marigolds.

**Uses in the Kitchen:**
Thai Basil is ideal for curries, stir-fries, noodle dishes, and soups like pho. It adds a fresh, aromatic flavor when used as a garnish or blended into sauces and pastes.

### Dark Opal Basil (*Ocimum basilicum* var. *purpurascens*)
**Description:**
Dark Opal Basil is an ornamental and culinary variety with striking purple leaves, a hint of green variegation, and pale pink flowers. Its flavor is slightly milder and sweeter than traditional basil.

**How to Start from Seed:**
1. Follow the same method as for Thai Basil, planting seeds indoors 6–8 weeks before the last frost.
2. Maintain similar temperature and light conditions.
3. Germination is also 5–10 days. Transplant outdoors after the frost risk has passed.

**How to Grow in the Garden:**
- **Planting:** Choose a sunny site with rich, well-draining soil (pH 6.0–7.5). Space plants 10–12 inches apart.
- **Care:** Provide consistent watering and occasional feeding with a balanced fertilizer.
- **Maintenance:** Pinch off flower buds to prolong leaf production. It is both ornamental and functional, making it suitable for borders and container gardens.

**Uses in the Kitchen:**
Dark Opal Basil can be used in salads, pesto, infused oils, and vinegars. Its mild, slightly sweet flavor pairs well with fruits and desserts. The leaves are also great for herbal teas and cocktails.

Both varieties thrive with attentive care and are versatile in culinary applications.
