Saperavi is a dark-skinned, pink-fleshed grape variety originally from the Georgian Republic.
Originating in the the early 1950's in the Soviet Republic of Georgia, Saperavi is a Vitis vinifera grape responding much like other red vinifera as far as growth habit and cold and disease tolerance go. Saperavi vines are grown widely throughout the Caucasus (the crossover between the Asian and European continents), and further afield in various regions of the former Soviet Republic. As a late-ripening variety, Saperavi thrives in the cooler climates of continental eastern Europe where it produces generous yields at high altitudes without compromising quality too drastically.

In the vineyard, Saperavi is a hardy variety producing loose clusters that are relatively disease resistant. It is capable producing good quality even when the yield is high.
In Georgia, Saperavi's best expression comes from its premier region Kakheti, near the eastern border with Azerbaijan. In New Zealand, Hans Herzog Estate in Marlborough is producing a varietal Saperavi to high acclaim.
