Curcuma (or turmeric) has played an important role in Indian Ayurvedic teachings for 4000 years. This spice is an integral part of Indian cuisine and is enjoyed daily. It is contained in various spice mixtures and gives the classic curry spice its yellow color. The curcuminoids, the main ingredients of the turmeric plant, are extracted from the rootstock. The main component of the curcuminoids is curcumin. The root also contains aromatic essential oils that give it the typical peppery, fresh and slightly bitter taste.
