Uses: Culinary Duration: Annual

A specialty variety of Chicory that's very rare and sought after in Italy for it's culinary use with thick succulent stems from southern Italy. These stems are the part used in salads .A very early variety with long, green serrated leaves similar to dandelion. Harvest when young and tender and eat raw or cooked.
Chicory is a flowering plant in the dandelion family that is characterized by a tough, hairy stem, light purple flowers and leaves that are commonly used in salads.
Chicory coffee tastes similar to coffee but has a flavor that's often described as slightly woody and nuttyCommon chicory is a somewhat woody, perennial herbaceous plant of the dandelion family Asteraceae, usually with bright blue flowers, rarely white or pink. Many varieties are cultivated for salad leaves, chicons, or roots, which are baked, ground, and used as a coffee substitute and food additive.
Chicory is used for loss of appetite, upset stomach, constipation, liver and gallbladder disorders, cancer, and rapid heartbeat. It is also used as a โtonic,โ to increase urine production, to protect the liver, and to balance the stimulant effect of coffee. Perennial herbaceous plant of the dandelion family Asteraceae, usually with bright blue flowers.
To brew basic chicory coffee, use about 2/3 ground coffee and 1/3 chicory. Brew as you normally would in a drip coffee maker, a French press, or your favorite method. Enjoy chicory on its own by brewing it as you would any other coffee but begin with at least half the grounds.
