Cabbage, Seeds, Pak Choi - Tall White Stem - Hybrid Other Common Names: ?Bok Choy? How to Grow Tall White Stem Pak Choi Cabbage Prepare fertile, well-draining soil. Sow seeds in the spring after the last frost to early summer, or late summer/early fall. Keep soil moist and fertilize as needed. Optimum growing temperatures are in the 60sF. Exposure to frost or prolonged temperatures below 50F may result in bolting. Mulch fall crops to avoid premature bolting. Harvest when about 8-10” tall. Harvesting Pak Choi This pak choi is fully harvestable at 45-50 days, but it can also be harvested at 25-35 days for Miao (early stage). It is ideal to harvest pak choi in the mornings before the heat of the sun removes moisture from the leaves. Cut the short root stem below the base and lift away the head of the cabbage. Culinary Tips Use in stir-fries, sautéd, or braised. To prepare, rinse well and separate the stems before tearing leaf greens from ribs. Cut into thin slices. If it is also tender enough, harvest at 30-35 days and add to a fresh salad for an Asian flair. For stir fry, cut into 1/2" slices and saute with oil, vegetables, and/or the meat of your choice. You can also use it in soups, for ohitashi, and pickles.
