The carob (Ceratonia siliqua) is an evergreen tree or shrub belonging to the Caesalpinioideae sub-family within the legume family, Fabaceae. Cultivated widely for its edible pods, it also serves as an attractive ornamental addition to gardens and landscapes. Indigenous to the Mediterranean region and the Middle East, the carob tree serves as a direct source of energy and protein. Packed with essential nutrients including vitamins A, B, and D, along with phosphorus, potassium, magnesium, calcium, iron, zinc, manganese, and copper, carob is also rich in polyphenols, glutamic acid, and arginine.
